2018 Eden Valley Cabernet Sauvignon Wine Description
Deep crimson in colour, with vibrant black-olives, spiced-cedar, cloves and fresh blackcurrant aromas. A refined and focused palate, displaying complex brooding characters, with a rounded and fleshy mid-palate. A wine with lovely structural tannins, which will mature gracefully for many years to come.
On the palate, it’s full of berry flavours, very soft tannins and acid. It’s easy drinking yet complex.
Winemaking
This wine is from the vintage’s best Cabernet Sauvignon barrels and in 2018 was produced from predominantly the Dawkins vineyard which lies east of the Eden Valley township. The fruit was handpicked and 100% de-stemmed into an open top fermenter, where it remained for 18 days. Naturally fermented and hand plunged daily then pressed to a mix of new and seasoned French oak hogsheads for maturation. Matured in barrel for 20 months with no racking, before being clarified and bottled without filtration.

Perfectly drinking now and put the wine in the fridge for about 20 minutes before drinking to bring down the temperature to about 18ºC.
